Cranberry-Lemon Crumb Muffins


If you're like me, you've likely stashed a few leftover holiday provisions in the freezer. Extra butter, nuts, cranberries.... Now, after a brief vacation from baking, I can finally look at it all again! The first thing I pulled back out were those cranberries. After all, cranberries are the perfect winter fruit, no? So colorful and tart, they brighten up most everything.


The husband and I are trying to cut back on the sweets...our typical January resolution. But, cut back on sweets all together? Um...no. So, I make things like muffins. I can freeze muffins and take one out at a time. Cranberries make for perfect muffins. Plus, I had buttermilk and lemons in the fridge. They were meant to be....

Cranberry-Lemon Crumb Muffins

Ingredients

  • 3/4 cup sugar, divided
  • 2 teaspoons grated lemon peel
  • 2 1/4 cups all purpose flour, divided
  • 2 tablespoons cold butter, cubed
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk, warmed to room temperature
  • 6 tablespoons melted butter
  • 1 egg, room temperature
  • 1 teaspoon vanilla
  • 1 1/2 cups fresh or frozen cranberries

Instructions

  1. Preheat oven to 400 degrees F.; line a 12- cup muffin pan with paper cups.
  2. In a small bowl, blend together the sugar and the lemon peel. Set aside 1/2 cup.
  3. In another bowl, combine 1/4 cup lemon-sugar and 1/4 cup flour. With a fork, cut in 2 tablespoons of cold butter until the mixture is crumbly.
  4. In a large bowl, whisk together 2 cups flour, the remaining 1/2 cup lemon-sugar, baking powder, and salt.
  5. In a separate bowl, whisk together the buttermilk, butter, egg, and vanilla.
  6. Add the buttermilk mixture to the flour. Stir until just combined. Fold in the cranberries.
  7. Use a cookie scoop or spoon to divide the batter evenly among the muffin cups. Sprinkle the tops of the muffins with the reserved crumb mixture. Bake for 18 to 20 minutes, or until the tops spring back when lightly touched.

Milk and Honey Poppy Seed Muffins #Improv


After totally neglecting the Improv challenge for the last few months, I am happy to say that I'm back in the saddle!  For those not in the know, the Improv challenge is a fun way for us to play with our food. Each month our fabulous new leader, Lesa from Edesia's Notebook, provides us with two ingredients with which to make marvelous creations. This month our theme is Milk and Honey...such a tasty combo! How fitting is it that my husband brought home a carton of Almond Milk with a Hint of Honey?!

 I honestly didn't know what I was going to make until I started gathering my ingredients. Of course there was honey, but I also grabbed a bottle of poppy seed and some frosted flakes. Muffins were in the works!

Milk and Honey Poppy Seed Muffins

Ingredients

  • 1 cup milk or almond milk
  • 1 egg, slightly beaten
  • 6 tablespoons coconut oil, melted
  • 1 teaspoon coconut extract
  • 1/2 teaspoon vanilla
  • 1/4 cup honey
  • 2 tablespoons poppy seed
  • 2 cups flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup crushed frosted flakes

Instructions

  1. Preheat oven to 375 degrees F.; line a 12 cup muffin tin with cupcake liners.
  2. In a medium bowl or large measuring cup, combine the milk, eggs, coconut oil, extracts, and honey. Stir in the poppy seed and allow to soak for 30 minutes.
  3. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk mixture and stir until just moistened (batter will be lumpy). Spoon batter into cupcake liners. Sprinkle the frosted flakes over the muffin tops.
  4. Bake for 18-20 minutes, or until the tops spring back when lightly touched.
Prep Time: 00 hrs. 45 mins.
Cook time: 00 hrs. 20 mins.
Total time: 65 mins.




The cornflakes give the muffins a little crunch....

Orange-Vanilla Muffins



I can hardly believe that Spring (notice I had to capitalize it) is finally here. After such a long winter, I'm ready for something a little sunny. Sunny? What I mean to say is fresh, light, and...well..citrus-y. Not to worry--chocolate is never very far away from me--let's just change things up a little for now.


Just look at how refreshing this orange looks! I used one large orange for this recipe.

I'm a little schizophrenic eclectic when it comes to food. One minute I'm all about healthy and the next I'm stuffing my face with muffins. Seriously, though, look at all of the vitamin C going into this batch of Orange-Vanilla Muffins...... 


A little yogurt and coconut oil makes these even healthier. Believe it. Negates the sugar and white flour. Still feel guilty? Swap 1 cup of  white whole-wheat flour for 1 of the cups of all purpose flour.



My inspiration for these citrus-y muffins came from a new flavor of yogurt that I found while I was at the grocery store....Orange Vanilla. I love that flavor combination. It reminds me of creamsicles. I couldn't wait to try it in a recipe. Feel free to sub plain or vanilla yogurt if you can't find this one.

Orange-Vanilla Muffins

1-2 tablespoons finely grated orange zest, divided
3/4 cup granulated sugar, divided
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 (5-6 oz) container Orange-Vanilla Greek yogurt (sub plain or vanilla, if desired)
1 egg, slightly beaten
1/2 cup fresh orange juice
6 tablespoons melted coconut oil
1 teaspoon vanilla extract

Preheat oven to 375 degrees F.; line a 12-cup muffin pan with paper liners.

In a small bowl, stir together 2 teaspoons orange zest and 1/4 cup sugar; set aside.

In a large bowl, whisk together the flour, sugar, baking powder, and salt; set aside.

Place the yogurt, egg, orange juice, and coconut oil in a microwave safe bowl or large measuring cup. Use a fork to blend the mixture. Microwave on high for 30-40 seconds, or until the mixture is at room temperature (and the coconut oil stays melted). Stir in the vanilla and the remaining orange zest. Add the liquid mixture to the flour mixture and gently stir with a rubber spatula until just blended--batter will be lumpy.

Spoon the batter into the lined muffin cups. Sprinkle the sugar/orange mixture over the tops of the muffins. Bake for 17-20 minutes, or until the tops spring back when lightly touched. Remove the muffins from the pan and cool on a wire rack.

Lime and Coconut Blueberry Muffins


Do you ever watch Chopped? It's the show on Food Network where the contestants are given baskets with three mystery (and often odd) ingredients with which they must conjure up appetizers, entrees, or desserts within impossible time limits. It's fun to watch and I'm often amazed at the interesting dishes the contestants come up with in such a short time. It has occurred to me, however, the reason we're so attracted to this show is its similarity to our own experiences in the kitchen. Doesn't nearly every home cook have times where they must prepare a dish with whatever they have on hand and in a limited amount of time? If you're like me, it's an almost daily occurrence.

To give you an example, the other day I was faced with a pint of blueberries that had to be dealt with. I had procrastinated for the better part of a week and they had to be used up before they got wrinkly and gross...I hate to waste food. Now, it was early morning and I had to get ready for work...what to make quick? Muffins! 

A quick survey of the fridge and cupboard told me that I had the basics...flour, sugar, vanilla...there was a lime and some lime yogurt...oh yes...coconut, some coconut milk, and if I wasn't mistaken...coconut oil! I had a theme!


Luckily, I had some coconutty items from my recent trip to Trader Joe's. I could have easily subbed butter for the coconut oil, sour cream for the yogurt, and lemon for the lime....

Over the years, I've come to love these kitchen adventures. In fact, it has translated into a couple of hobbies, one being this blog and the other? Cooking contests! Yep, it all started with my obsession with getting into the Pillsbury Bake-Off. It was a lofty goal and it took me many years, but I did it! Holy cow was that an exciting event....so much so that I was concocting new recipes in my head on the plane ride home. While I didn't win a prize that time, I came home with a plethora of foodie friendships that I can't begin to put a price tag on.

To be honest, the friendships that I formed from that one experience began several months before I actually participated in the event. How? Because I became a member of Cooking Contest Central as soon as I had my entries in to Pillsbury, even before I found out that I was a finalist. 





I had been a member of CCC several years earlier, so I knew what it was all about and I wanted to be sure that I had all of the up-to-date information on the Pillsbury Bake-Off that year. What I didn't count on was all of the support from so many people, many of whom had already gone to the Bake-Off. Not only was I able to connect with people that had the same interest, I had access to all of the latest cooking/baking contests, and I had the ears of actual contest winners. I didn't expect to be swept up into so many different contests, but the best part was when I did find out that I was a finalist at the Pillsbury Bake-Off, I got to share that excitement with about 30 others who were also chosen!

Lime and Coconut Blueberry Muffins

3/4 cup sugar, divided
2 teaspoons freshly grated lime peel, divided
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
1/2 cup flaked coconut
1 pint fresh blueberries
1/2 cup coconut milk
1 egg, slightly beaten
1 (5-6 oz) container lime flavored Greek yogurt
6 tablespoons coconut oil, melted
1/2 teaspoon vanilla


1. Preheat oven to 400 degrees F.; line a 12 cup muffin pan with paper liners.

2. In a small bowl, stir together 1/4 cup sugar and 1 teaspoon lime peel; set aside.

3. In a large bowl, whisk together the flour, baking powder, salt, coconut, and remaining lime peel and sugar. Stir in the blueberries and set aside.

4. Add the milk, the egg and the yogurt to a large, microwave safe measuring cup. Use a fork to blend the mixture. Microwave for about 30 seconds, or just until the mixture is at room temperature; stir in the coconut oil and the vanilla. Add the milk mixture to the flour mixture and gently stir with a rubber spatula until just blended.

5. Spoon the batter into the lined muffin cups. Sprinkle the sugar/lime mixture over the tops of the muffins. Bake for 17-20 minutes, or until the tops spring back when lightly touched. Remove the muffins from the pan and cool on a wire rack.

Dark Chocolate and Orange Muffins....#Recipesfromtheheart

Cancer awareness is a subject near and dear to my heart, as well. My mother passed away from complications of cancer (she had both ovarian and colon cancer) when I was just twenty years old. Last year, I lost both my mother-in-law and my sister-in-law to breast cancer. Since my mother-in-law's mother also had breast cancer, there are three generations of women in my husband's family that suffered from it, making me fear for my daughter. Cancer in our family isn't limited to females though, as my father-in-law succumbed to lung cancer soon after my husband and I were married.

When you read Kim's story of her and her father's journey through cancer, you will be heartbroken. Cancer not only robs it's victims of their health, it also robs the victim's entire family...of their sense of well-being, for lack of a better word. It is tough, tough, tough to care for an ailing human being, but when that person is a parent or other family member it is so draining. I thank my sister for being there for my mother through the very end. I was in college and barely aware of all she went through. My time came many, many years later when I cared for my mother-in-law.



My mom in the kitchen...I love to remember her this way.

I pondered for a while over what kind of recipe I should share for a cancer awareness post. Should it be healthy? Should it be something a cancer patient could eat? In the end, I decided that it might be too difficult to decide what a good food for a cancer patient is...there are way too many variables. Let's concentrate instead on the caregivers or the family members that are involved with caring for someone with cancer. For sure they could always use a pick me up, no? So, I decided that a treat was in order. These muffins, full of dark chocolate and fresh orange flavor, may not be health food but they sure are tasty and will be a welcome treat for anyone.

Dark Chocolate and Orange Muffins

1 1/2 tablespoons orange zest, divided
3/4 cup granulated sugar, divided
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3.5-4 oz. premium dark chocolate, chopped
1/2 cup buttermilk
1 egg, room temperature
1/4 cup coconut oil, melted
1/2 cup fresh orange juice
1 teaspoon vanilla


1. Preheat oven to 400 degrees F.; line a 12 cup muffin pan with paper liners.

2. In a small bowl, stir together 1 teaspoon of the orange zest with 1/4 cup of the sugar; set aside.

3. In a large bowl, whisk the flour, baking powder, salt, and 1/2 cup sugar together. Stir in the chopped chocolate; set aside.

4. Add the buttermilk, the egg and the orange juice to a large, microwave safe measuring cup. Use a fork to blend the mixture. Microwave for about 30 seconds, or just until the mixture is at room temperature; stir in the melted coconut oil, the vanilla, and the remaining orange zest.

5. Add the buttermilk mixture to the flour mixture and gently stir with a rubber spatula until just blended. 

6. Spoon the batter into the lined muffin cups. Sprinkle the orange-sugar over the tops of the muffins. Bake for 17-20 minutes, or until the tops spring back when lightly touched. Remove the muffins from the pan and cool on a wire rack.

Mixed Berry Muffins...a healthier option


Well folks, believe it or not, my elliptical has been dusted off and I've officially started exercising at least once a day. Don't get too worked up, though. I'm not switching over to posting diet food...but I did manage to make some muffins a tad bit healthier. I hope you don't mind if I share....


Diets really don't work out very well for me. If I deprive myself, I end up craving things that I wouldn't normally even think about eating That said, I need to make some changes or my health is going to suffer. So what is a food obsessed gal to do? As it turns out, nothing terribly drastic.


I'm thinking that if I trim a few calories here and there, and use some common sense, I should be able to shed a few pounds, no? Let's start with my basic muffin recipe. If you want a the full-calorie version, you can find it here: Strawberries and Cream Muffins Now, here's what I did to change it up:

Mixed Berry Muffins

1 cup all purpose flour, divided
1 cup white whole wheat flour
2 teaspoons baking powder
1/2 cup granulated sugar, plus an additional 2 tablespoons for topping
1/4 teaspoon salt
1 tablespoon grated orange peel
1 1/2 cups frozen mixed berries
1 (6 oz) container low-fat Greek yogurt (I used strawberry)
1/2 cup low-fat buttermilk
1 egg, slightly beaten
1/4 cup canola oil or coconut oil
1/2 teaspoon vanilla

Preheat oven to 400 degrees F.; line cupcakes pans with 18 liners.


You may want to spray the liners with a little cooking spray. I found the lower fat muffins stuck to the paper.

In a large mixing bowl, whisk together 3/4 cup all purpose flour, 1 cup white whole wheat flour, baking powder, sugar, and orange peel; set aside.

Toss the frozen berries (if the strawberries are huge, cut them into smaller pieces) with the remaining 1/4 cup flour. Mix the yogurt, buttermilk, egg, oil and vanilla together in a small bowl or measuring cup. Add the berries and the yogurt mixture to the dry ingredients and stir until just mixed...batter will be lumpy...don't over mix.


Yikes, there are some huge strawberries in there...I cut them into smaller pieces. Keep the fruit frozen so your batter doesn't get all discolored.

With a cookie scoop, divide the batter among the muffin cups. Sprinkle the remaining sugar over the batter. Bake the muffins for 15-18 minutes, or until a toothpick inserted in the middle comes out clean. Cool on a rack for 10 minutes. Serve warm.


Another change I made was to make the muffins smaller...I divided the batter into 18 muffins instead of 12. I also used a little less sugar for the topping.


I had forgotten that I had some dried orange peel from Penzey's in the fridge. I mixed some in with the sugar that I used for the topping...in fact I made a little extra orange-sugar and used some on my oatmeal during the week.


So what do you think? They are smaller, have less fat, and have a little more fiber. The orange peel and the flavored yogurt gives them some good flavor...I really wasn't missing anything. The only other thing I did was to freeze them all---that way I'm not tempted to eat more than one. I just nuke one for about 30 seconds when I take it from the freezer. Feel free to use fresh fruit in your version...the berries here weren't looking very pretty, yet.

Cranberry-White Chocolate Muffins



One of the best parts of the holiday season is the resurgence of all of my favorite foods, and as with anything holiday related, these foods are popping up earlier and earlier. Granted, cranberries are eaten year round, but the bags-piled-on-bags of fresh cranberries in the produce department really mark the beginning of the season. So, to properly jump-start the holidays, how about a nice muffin?



Cranberry-White Chocolate Muffins

2 cups all purpose flour
3/4 cup granulated sugar, divided
2 teaspoons baking powder
1 tablespoon fresh orange zest (or 1 teaspoon dried)
1 (3.5-4 oz) bar of good quality white chocolate, chopped
1 1/2 cups fresh cranberries
1/2 teaspoon salt
1 cup buttermilk
1 egg, slightly beaten
6 tablespoons melted butter or coconut oil
1/2 teaspoon vanilla

Preheat oven to 400 degrees F.; line a 12 cup muffin tin with paper liners.

In a large bowl, whisk together the flour, 1/2 cup sugar, baking powder, orange peel, and salt. Stir in the white chocolate and the cranberries. In another bowl, stir together the buttermilk, egg, butter or coconut oil and vanilla. Combine the wet ingredients with the dry, stirring until just mixed, being careful to not over beat. Spoon the batter into the muffin tins. Sprinkle the remaining sugar evenly over the muffin tops.

Bake for 18-20 minutes, or until the tops spring back when lightly touched. Cool on a wire rack.




I've been saving a bar of white chocolate to pair up with something good and cranberries seem to be the perfect accompaniment...sweet and smooth with tart and tangy. 


I'll admit I used the dried orange peel this time. This stuff from Penzey's is terrific. 


Whisk all the dry ingredients first--you don't want to over-mix once you add the liquid.


A little sprinkle of sugar on top is a nice touch, no?



I love that the cranberries pop and give the muffin so much color.

Spiced Pear Muffins with Candied Ginger



I have a love/hate relationship with pears. Admittedly, they can be gorgeous to behold, all fall-like in their appearance. It makes me want to take a juicy bite out of one before I even leave the store. Unfortunately, I've been betrayed more than once by that beauty, ending up with hard or mealy fruit. Then, I luck into just the right one, and with juice dribbling down my chin, I fall in love with them all over again.


I had some of the good ones on hand the other day when I came up with another muffin recipe. This one combines those fresh, ripe pears with some ginger, cardamom, and nutmeg for a perfectly moist little cake muffin.

Spiced Pear Muffins with Candied Ginger

2 cups all purpose flour
3/4 cup granulated sugar, plus an additional 2 tablespoons for topping
2 teaspoons baking powder
1/2 teaspoon cardamom
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups chopped, fresh pears (about 2 medium)
1 cup low fat buttermilk
1/2 cup butter, melted
1 egg, slightly beaten
1 teaspoon vanilla
2 tablespoons minced, candied ginger

Preheat oven to 400 degrees F.; line a 12 cup muffin tin with paper liners.

In a large bowl, whisk together the flour, 3/4 cup sugar, baking powder, spices, and salt. In another bowl, stir together the chopped pears, buttermilk, butter, egg, and vanilla. Combine the wet ingredients with the dry, stirring until just mixed, being careful to not over beat. Spoon the batter into the muffin tins. Combine the remaining sugar and the minced candied ginger and sprinkle evenly over the muffin tops.

Bake for 18-20 minutes, or until the tops spring back when lightly touched. Cool on a wire rack.


I had nearly forgotten about this little jar of candied ginger--it was perfect for the topping.
