Spicy Tomato Burger


Earlier this month, Red Gold launched another Summer Grilling Season with loads of great recipes. One of my favorites from last year made an appearance again this year--the Spicy Tomato Burger! This burger is seriously good and so, so easy to make. I have to tell you that my burger making skills have historically been lackluster at best. That was before I discovered the "secret" ingredient.....wait for it....canned diced tomatoes! In this case, it's the flavorful Diced Tomatoes with Green Chilies...


It's always a good day when tomato products show up at my door....

Simply drain a 10 or 14 ounce can of Red Gold Petite Diced Tomatoes with Green Chilies and mix it into a pound of lean ground beef. Add a little salt and pepper, form into patties, and you are good to go. I like to add a nice slice of pepper-jack cheese to make it complete. Now wasn't that easy?


Of course, you don't have to stop at just this flavor combo. Some of you may remember the Caribbean Chicken Burger I made last year. Simply mix a pound of ground chicken or turkey with a can of Petite Diced Tomatoes with Cilantro and Lime (well drained), a slightly beaten egg, 1/2 cup bread crumbs, salt and pepper, and voila! another delicious burger is made!

Let's not forget our toppings. Guess what new product Red Gold has just come out with? Yes! Sriracha Ketchup! I have a preview bottle that is almost gone. Luckily, this ketchup rolls out nationwide by the end of July.

Stuffed Portobello Mushroom Burgers


I don't know about you, but I'm still recuperating from the July 4th weekend...I've got quite the food hangover. The weather was perfect here...just right for grilling. Doesn't food just taste better on the grill? I actually had a little help with my burgers this weekend. Red Gold Tomatoes sent me a little grilling package to liven them up! Am I lucky or what?!


Look at this cute little six pack of diced tomatoes...and I scored an apron and some recipes, too!

I'll give you the details in just a bit. First, I'd like to share this awesome recipe for Stuffed Portobello Mushroom Burgers. 


This is easy peasy...brush on a little pesto and stuff 'em with some diced tomatoes...so tasty!



Stuffed Portobello Mushroom Burger

Red Gold Tomatoes

Stuffed Portobello Mushroom Burger

Fresh veggies fill this wonderful meatless burger. Made with Red Gold Petite Diced Tomatoes with Garlic and Olive Oil.

Ingredients

  • 4 Portobello mushroom caps, stem and gills removed
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon prepared pesto
  • salt and black pepper to taste
  • 1 small yellow bell pepper to taste
  • 1 (14.5 oz) can Red Gold Petite Diced Tomatoes with Garlic and Oil, drained very well
  • 4 cups fresh spinach, chopped
  • 4 slices provolone cheese
  • 4 whole wheat buns

Instructions

  1. Preheat grill to medium-high heat. Combine olive oil, pesto, salt and black pepper in a small bowl. Brush each mushroom cap with the oil mixture.
  2. Grill mushroom caps, rounded side up, for about 4 minutes. While cooking, combine bell pepper, 2/3 of the Red Gold Petite Diced Tomatoes with Garlic and Olive Oil, and spinach in a mixing bowl. turn mushrooms over and fill with tomato mixture. Cover and grill for 3 more minutes. Place a piece of cheese on each mushroom, covering tomatoes, and grill 1 to 2 minutes or until cheese is melted.
  3. Place a whole wheat bun that has been spread with Garlic Aioli--1/4 cup light mayonnaise and 1/3 cup Red Gold Petite Diced Tomatoes with Garlic and Olive Oil, drained.
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 10 mins.
Total time: 20 mins.




For the carnivores in the group, I made some Spicy Tomato Burgers. I ate both versions....




For the Spicy Tomato Burgers, simply mix a well-drained can of Red Gold Petite Diced Tomatoes with Green Chiles with one pound of ground beef.

Caribbean Chicken Burgers


One reason this is my favorite time of year is the fact that I can grill my food nearly every weekend. I love it all on the grill---brats, hot dogs, chicken, steak---but, I think my all time favorite grill food is the burger. Usually, I just slap some burger into a patty and throw it on the grill, hoping that I don't leave it on so long that it dries out. This is especially hard to do with my husband's burgers. He wants well done, even if it means the consistency of shoe leather. ewww.

Recently, my friends at Red Gold Tomatoes sent me a little something to remedy that dried out burger. It was a six-pack of various cans of diced tomatoes and an awesome bottle of Mama Selita's Jalapeno Ketchup!


There was a time when I thought canned tomatoes should only be opened in the dead of winter but, while I do love a beautiful, ripe fresh tomato, I have come to find some great uses for the canned variety. Along with the six pack of tomato product, there were some fabulous recipes that I just had to try.


The recipes all sound great. There is a Red Gold burger, topped with a delicious sounding tomato mixture-- green onions, garlic, jalapenos, ginger, balsamic vinegar, brown sugar....oh my...this is next on my list. There is a Spicy Burger consisting of ground beef mixed with Red Gold Petite Diced Tomatoes with Green Chilies, and an Italian Burger that has ground beef mixed with Red Gold Diced Tomatoes with Basil, Garlic, & Oregano. Both of those sounded really good, but I decided a something a little different. Take a look at this:

Caribbean Chicken Burger (courtesy of Red Gold Tomatoes)

1 pound ground chicken
1 (14.5 ounce) can Red Gold Petite Diced Tomatoes with Lime Juice & Cilantro, drained well
1 egg beaten
1/4 cup bread crumbs
Salt and Pepper to taste

Combine ground chicken, Red Gold Diced Tomatoes with Lime Juice & Cilantro, egg, and bread crumbs in a bowl. Form into patties and season with salt and black pepper. Place on grill and cook to desired temperature, 160 degrees F. for completely cooked burgers.

Serving Suggestions: Serve on toasted bun, with sliced avocado or a grilled pineapple slice.


Be sure to drain the tomatoes really well or the burger will fall apart...


I went easy and used canned pineapple...they turned out yummy!


Some panko bread crumbs and an egg help bind everything together.


You may want to oil the grill first...they do stick a little.


Oh my gosh...these were good! The tomatoes really keep the meat from drying out.
