Sriracha Joe's


When I was growing up, Sloppy Joe's were every school kid's favorite recipe.  In Wisconsin, however, we called them Spanish Hamburgers. Does anyone else remember this? Perhaps, in the land of meat and potatoes, a mixture of ground beef, celery, onions, and tomato paste was considered exotic? My mother's recipe was seasoned only with salt and pepper, and while I loved it as a kid, I couldn't help but doctor it up when I got older. Usually, this meant some mustard, worcestershire sauce, garlic....whatever I could dig up in the fridge. Until now. Now, there is this.....


Bonus--there's Red Gold Ketchup in there!

A few weeks ago, I was lucky enough to be invited to Indiana to participate in the Red Gold Tomatoes' Farm to Table Event. If you follow my blog, you all know that I'm already a huge Red Gold fan. This trip confirmed what I already knew....Red Gold Tomatoes are the best! I saw first hand how those fresh tomatoes make it into the cans, from one of the 53 Midwest family farms that supply the tomatoes to the actual plant, where the tomatoes are sorted, cleaned, and canned using the finest methods. If there was ever any doubt that not all canned tomatoes are equal, the "tasting" portion of this trip erased all of it. Different brands of tomatoes were displayed side by side. There was visual evidence---you could see the "other" brand's tomato was mushy---and sensory evidence...we could taste a difference! Plus, since Red Gold is committed to providing the best product to their consumers, their tomatoes are certified non-GMO and their cans are non-BPA.


Red Gold Tomatoes mean more than just canned tomatoes and sauce, though...they have ketchup, too! Recently, they teamed up with the original Huy Fong Sriracha to make an incredible Sriracha Ketchup, and they've rolled it out nationwide. So if you can't find the original Red Gold Ketchup in your neck of the woods, look in your local Walmart or Target and you'll find the Sriracha Ketchup. Go get some and make some of these Sriracha Joe's!


I made a slider version using my Homemade Hamburger Bun recipe. If you make your own buns (I highly recommend this), just portion out the dough into 18 portions. Then just butter them, toast them, and fill them up with this awesome recipe. This can be easily doubled or tripled for a bigger crowd.


Sriracha Joe's

Ingredients

  • 1 pound ground chuck
  • ½ cup diced red bell pepper
  • ½ cup diced onion
  • ½ cup diced celery
  • 2 cloves garlic, diced
  • ¾ cup Sriracha Ketchup
  • ½ cup water
  • 2 teaspoons yellow mustard
  • 1 tablespoon brown sugar
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon chipotle chile pepper, optional

Instructions

  • Brown the ground chuck, bell pepper, onion, and celery in a medium skillet over medium heat. Drain, then add the garlic, water, ketchup, mustard, brown sugar, Worcestershire sauce, and chile pepper. Stir to combine and bring to a simmer.
  • Continue to simmer for 20 minutes, adding additional water if needed. Add salt and freshly ground pepper to taste. For less heat, reduce the amount of Sriracha Ketchup and replace with regular ketchup. Makes 8 sliders or 4 regular sandwiches.

Spicy Tomato Burger


Earlier this month, Red Gold launched another Summer Grilling Season with loads of great recipes. One of my favorites from last year made an appearance again this year--the Spicy Tomato Burger! This burger is seriously good and so, so easy to make. I have to tell you that my burger making skills have historically been lackluster at best. That was before I discovered the "secret" ingredient.....wait for it....canned diced tomatoes! In this case, it's the flavorful Diced Tomatoes with Green Chilies...


It's always a good day when tomato products show up at my door....

Simply drain a 10 or 14 ounce can of Red Gold Petite Diced Tomatoes with Green Chilies and mix it into a pound of lean ground beef. Add a little salt and pepper, form into patties, and you are good to go. I like to add a nice slice of pepper-jack cheese to make it complete. Now wasn't that easy?


Of course, you don't have to stop at just this flavor combo. Some of you may remember the Caribbean Chicken Burger I made last year. Simply mix a pound of ground chicken or turkey with a can of Petite Diced Tomatoes with Cilantro and Lime (well drained), a slightly beaten egg, 1/2 cup bread crumbs, salt and pepper, and voila! another delicious burger is made!

Let's not forget our toppings. Guess what new product Red Gold has just come out with? Yes! Sriracha Ketchup! I have a preview bottle that is almost gone. Luckily, this ketchup rolls out nationwide by the end of July.

Spring Salad Shakeups


Are mornings as crazy at your house as they are at mine? Holy cow...it seems like I put in a full day before I even leave the house! Lately, my husband and I have been trying trying to adopt a healthier lifestyle. What this means to us is that it's even crazier in the morning as we try to get our "healthy" lunches put together. 

A few weeks ago, Red Gold Tomatoes sent me a "Spring Shake-Up" pack to help me get motivated for the new season. There were, of course, several cans of diced tomatoes, but they also included some great Springtime recipes and a big canning jar so that I could make a little shake-up of my own. Now, I realize I'm a little late to the salad shakeup party...but I am totally hooked!


I actually started experimenting with different salad combinations right after Easter. Hello--leftover eggs and ham? Luckily, I had two jars since my husband was totally on board with having his own to bring to work. 


There are no real rules for making these things, except maybe to keep the salad dressing on the bottom, so nothing gets too soggy. If you like croutons, bring them along separately. Then, just layer your favorite salad fixings or leftovers in the jar. Make it as colorful as possible...all of your co-workers will be jealous! 

I like to use a light ranch or a vinaigrette so that the salad dressing isn't too thick to shake. To help it along, I actually turned the jar upside down for a few minutes. Need an easy recipe? Here you go:

Honey-Balsamic Vinaigrette

A quick and easy salad dressing!

Ingredients

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon coarse ground mustard
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions

  • Whisk all the ingredients together until well-blended. Refrigerate until ready to use.
Yield: 4 servings
Prep Time: 00 hrs. 05 mins.
Total time: 5 mins.



The best part about these salads is that you can make them up ahead of time using whatever you have on hand. Chicken and bacon? How about a Chicken Club Shake-Up? Leftover steak? A Philly Cheese Steak Shake -Up would make a great meal.

Skinny Lasagna #RedGoldRecipes #Giveaway

I’m not sure what the weather has been like where you live, but in these parts it has been darn cold. I’m not really complaining (well, maybe just a little…) since I do live in Minnesota and it is January. The thing is, the cold weather makes me crave a nice comforting, warm casserole. Something that can serve a crowd, in case we invite a few people over to watch the game. Something easy, because I don’t want to spend the whole day in the kitchen. Oh yeah…can we make it lower in calories? I need to drop a few pounds….. Sound impossible? Meet Red Gold Tomatoes' recipe for Skinny Lasagna!


I was introduced to Red Gold's lasagna recipes last year, when I made their Fresh Harvest Lasagna. It is so easy to make! Seriously, there is no need to boil the lasagna and you don't need to buy that leathery "no boil" stuff, either...just regular lasagna. This year, Red Gold has teamed up with Laura's Lean Beef to create the perfect "Skinny", yet meaty lasagna....and it's just as easy to make. Laura's Lean Beef is a Kentucky based company that produces lean, natural beef from cattle that are humanely raised without hormones and fed a natural diet of grass and grain. Like Red Gold, they are a family run company!


"Skinny" Lasagna (recipe courtesy of Red Gold Tomatoes)

Ingredients:

1/2 cup water
1 (28 ounce) can Red Gold® Crushed Tomatoes, or 2 (15 ounce) cans Red Gold Crushed Tomatoes
2 (14.5 ounce) cans Red Gold® Diced Tomatoes with Basil, Garlic & Oregano
Ground black pepper to taste
1 teaspoon Italian seasoning
1 pound Laura's 96% Lean Ground Round, or ground turkey, cooked and drained
1 (16 ounce) box traditional whole wheat lasagna noodles
1 (15 ounce) carton low fat cottage cheese
2 cups shredded low fat mozzarella cheese
1/2 cup grated low sodium Parmesan cheese

Preheat oven to 350 degrees F. In large mixing bowl combine water, crushed tomatoes and diced tomatoes, black pepper, Italian seasoning and ground round, stir to combine ingredients in the sauce.

Cover the bottom of a 9x13x2 inch baking pan with 1½ cups of sauce mixture.  Arrange 1/3 of noodles on top of sauce, slightly overlapped.  Top with ½ of cottage cheese, ½ of mozzarella cheese and 1 cup of sauce.  Repeat layers and top with last 1/3 of noodles and the remaining sauce.  Sprinkle with Parmesan cheese.

Cover tightly with foil and bake for 1 to 1½ hours; until noodles are cooked. Let stand for 10 minutes before serving.


So that's it. Really. And even though I usually change at least a half dozen things in any given recipe, this time I left it as it was (except that I couldn't find whole wheat lasagna). Skinny? At about 330 calories per serving, it certainly is. My husband actually preferred the cottage cheese to the ricotta. He had no idea he was eating "Skinny" lasagna.

Stuffed Portobello Mushroom Burgers


I don't know about you, but I'm still recuperating from the July 4th weekend...I've got quite the food hangover. The weather was perfect here...just right for grilling. Doesn't food just taste better on the grill? I actually had a little help with my burgers this weekend. Red Gold Tomatoes sent me a little grilling package to liven them up! Am I lucky or what?!

This is easy peasy...brush on a little pesto and stuff 'em with some diced tomatoes...so tasty!



Stuffed Portobello Mushroom Burger

Red Gold Tomatoes

Stuffed Portobello Mushroom Burger

Fresh veggies fill this wonderful meatless burger. Made with Red Gold Petite Diced Tomatoes with Garlic and Olive Oil.

Ingredients

  • 4 Portobello mushroom caps, stem and gills removed
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon prepared pesto
  • salt and black pepper to taste
  • 1 small yellow bell pepper to taste
  • 1 (14.5 oz) can Red Gold Petite Diced Tomatoes with Garlic and Oil, drained very well
  • 4 cups fresh spinach, chopped
  • 4 slices provolone cheese
  • 4 whole wheat buns

Instructions

  1. Preheat grill to medium-high heat. Combine olive oil, pesto, salt and black pepper in a small bowl. Brush each mushroom cap with the oil mixture.
  2. Grill mushroom caps, rounded side up, for about 4 minutes. While cooking, combine bell pepper, 2/3 of the Red Gold Petite Diced Tomatoes with Garlic and Olive Oil, and spinach in a mixing bowl. turn mushrooms over and fill with tomato mixture. Cover and grill for 3 more minutes. Place a piece of cheese on each mushroom, covering tomatoes, and grill 1 to 2 minutes or until cheese is melted.
  3. Place a whole wheat bun that has been spread with Garlic Aioli--1/4 cup light mayonnaise and 1/3 cup Red Gold Petite Diced Tomatoes with Garlic and Olive Oil, drained.
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 10 mins.
Total time: 20 mins.




For the carnivores in the group, I made some Spicy Tomato Burgers. I ate both versions....




For the Spicy Tomato Burgers, simply mix a well-drained can of Red Gold Petite Diced Tomatoes with Green Chiles with one pound of ground beef.

Fish Tacos with Lime and Cilantro Aioli #RedGold


Just in time for spring and summer, my friends at Red Gold Tomatoes have come up with some tasty sauces....Aioli for everyone! Seriously, they've revved up this garlicky mayonnaise with their awesome Petite Diced Tomatoes. Tomato Aioli. I like the ring of that. 

The recipes are ridiculously easy---there are only two ingredients: Red Gold Petite Diced Tomatoes and Light Mayonnaise. No kidding. Did I mention this was an easy recipe? Think about it for a minute. Red Gold Tomatoes has quite the assortment flavored diced tomatoes...you could create an aioli from any one of them. Making a flatbread? Mix together the plain diced tomatoes, the mayo, and add a little pesto. Spread this on the flatbread with some grilled veggies, pop it in the oven, and voila! Dinner! Thinking of making something Mexican? Why, yes I am...I will share with you Red Gold's fabulous Fish Taco recipe.


Let's start with the aioli. Here it is: Drain a can of Red Gold Petite Diced with Lime Juice and Cilantro. Now mix it with 1/2 cup light mayonnaise. If you are feeling outrageous, add a few drops of Sriracha. Now put it in the fridge until you need it.

Next, mix up a simple marinade of 4 tablespoons orange juice, 2 finely chopped garlic cloves, 1/4 cup olive oil, a teaspoon oregano, 1/2 cup chopped cilantro, and 1/2 cup chopped onion. 


Easy, right? Now just saute the fish over medium heat, basting along the way, for about 3 minutes per side. Then coarsely chop it, and place it on a warm tortilla. Top it with some shredded cabbage (the red cabbage is a nice colorful touch), and top it with the aioli! Boom! Tacos!

Fresh Harvest Lasagna ..... #RGLasagna


With the Super Bowl nearly upon us, isn't it time we start thinking about what to feed a crowd? My friends at Red Gold Tomatoes are having a Lasagna Party with the perfect recipes to help out! They have even made it easy for you to create your own version of gourmet lasagna, by providing a fool-proof basic recipe....follow the basics and then add your own ingredients for your very own custom lasagna!


The basic Red Gold "All-In-One" Lasagna is so simple to make that even a novice cook will have no problem putting it together. It starts with regular lasagna noodles...nothing fancy...and you don't have to boil them to get it started. Then, a combination of  Red Gold® Diced Tomatoes with Basil, Garlic and Oregano, Red Gold® Crushed Tomatoes, and some Italian seasoning makes the delicious sauce (the sauce cooks up, full of flavor, right in the oven). Add your own favorite ingredients (sausage? chicken? pepperoni?) to make it your own, or choose one of Red Gold's gourmet recipe ideas. 

Since my daughter is a vegetarian, it was a no-brainer for me to choose Red Gold's Fresh Harvest Lasagna for my trial run. Oh my gosh---so easy and so good! Let's see how it's done---

Fresh Harvest Lasagna (recipe courtesy of Red Gold Tomatoes)

2  tablespoons extra virgin olive oil
1  large zucchini, chopped
1  medium yellow summer squash,
1 (small, yellow) onion, chopped
1/2  red bell pepper, chopped
1  cup fresh chopped broccoli florets
1  large carrot, minced
1  (8 ounce) package sliced fresh mushrooms, chopped
3   garlic cloves, minced
1/2  cup water
1  (28 ounce) can Red Gold® Crushed Tomatoes, or 2 (15 ounce) cans
2  (14.5 ounce) cans Red Gold® Diced Tomatoes With Basil, Garlic & Oregano
1   teaspoon Italian seasoning
Salt to taste
1 (16 ounce) box lasagna noodles, traditional, uncooked
1 (15 ounce) carton low fat ricotta cheese
3  cups shredded Italian blend cheese
1/2 cup grated Parmesan cheese

Preheat oven to 350 degrees F.  Heat oil in skillet over medium heat.  Add zucchini, squash, onion, bell pepper, broccoli, carrots and mushrooms; saute until vegetables are crisp tender.  Add garlic and cook for another minute, remove from heat.

In large mixing bowl combine water, RED GOLD® CRUSHED TOMATOES, RED GOLD® DICED TOMATOES with BASIL, GARLIC & OREGANO, Italian seasoning and salt.

Cover the bottom of a 9x13x2 inch baking pan with 1 1/2 cups of sauce mixture.  Arrange 1/3 of noodles on top of sauce, slightly overlapped.  Top with 1/2 of ricotta cheese, 1/2 vegetable mixture, 1 cup of Italian blend cheese and 1 cup of sauce.  Repeat layers and top with last 1/3 of noodles and the remaining sauce.

Sprinkle with remaining Italian blend cheese and Parmesan cheeses.

Cover tightly with foil and bake for 1 to 1½ hours; until noodles are cooked. Let stand for 10 minutes before serving.



I followed Red Gold's recipe exactly...well almost....I did use frozen broccoli instead of fresh....but really this version didn't need much improvising. I will pass along a couple of tips, though: 

(1) You can use a regular 9X13 pan...just make sure the sides are at least 2 inches deep. If you do use a regular pan (as opposed to a larger "lasagna" pan), make sure to place a baking sheet underneath to catch any drips.

(2) Use non-stick foil to wrap around the lasagna before placing it in the oven (non-stick side down!), or spray regular foil with cooking spray, so the cheese doesn't stick.


Oh my gosh...this is so easy to make and so tasty!

Caribbean Chicken Burgers


One reason this is my favorite time of year is the fact that I can grill my food nearly every weekend. I love it all on the grill---brats, hot dogs, chicken, steak---but, I think my all time favorite grill food is the burger. Usually, I just slap some burger into a patty and throw it on the grill, hoping that I don't leave it on so long that it dries out. This is especially hard to do with my husband's burgers. He wants well done, even if it means the consistency of shoe leather. ewww.

Recently, my friends at Red Gold Tomatoes sent me a little something to remedy that dried out burger. It was a six-pack of various cans of diced tomatoes and an awesome bottle of Mama Selita's Jalapeno Ketchup!


There was a time when I thought canned tomatoes should only be opened in the dead of winter but, while I do love a beautiful, ripe fresh tomato, I have come to find some great uses for the canned variety. Along with the six pack of tomato product, there were some fabulous recipes that I just had to try.


The recipes all sound great. There is a Red Gold burger, topped with a delicious sounding tomato mixture-- green onions, garlic, jalapenos, ginger, balsamic vinegar, brown sugar....oh my...this is next on my list. There is a Spicy Burger consisting of ground beef mixed with Red Gold Petite Diced Tomatoes with Green Chilies, and an Italian Burger that has ground beef mixed with Red Gold Diced Tomatoes with Basil, Garlic, & Oregano. Both of those sounded really good, but I decided a something a little different. Take a look at this:

Caribbean Chicken Burger (courtesy of Red Gold Tomatoes)

1 pound ground chicken
1 (14.5 ounce) can Red Gold Petite Diced Tomatoes with Lime Juice & Cilantro, drained well
1 egg beaten
1/4 cup bread crumbs
Salt and Pepper to taste

Combine ground chicken, Red Gold Diced Tomatoes with Lime Juice & Cilantro, egg, and bread crumbs in a bowl. Form into patties and season with salt and black pepper. Place on grill and cook to desired temperature, 160 degrees F. for completely cooked burgers.

Serving Suggestions: Serve on toasted bun, with sliced avocado or a grilled pineapple slice.


Be sure to drain the tomatoes really well or the burger will fall apart...


I went easy and used canned pineapple...they turned out yummy!


Some panko bread crumbs and an egg help bind everything together.


You may want to oil the grill first...they do stick a little.


Oh my gosh...these were good! The tomatoes really keep the meat from drying out.
